Triple Decker Burgers with Cheese Sauce
Three smash patties with pickle-roasted vegetables and diner cheese sauce.
Vegetable Mix
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 red onions, chopped
- 2 tablespoons oil
- Salt
- 2 dill pickles, chopped, plus 2 tablespoons pickle juice
- 3 tablespoons ketchup
Cheese Sauce
- 1 cup cream
- 1 tablespoon Dijon mustard
- 1 tablespoon soy sauce
- 1 teaspoon hot sauce
- 1 garlic clove, minced
- 1 cup shredded sharp cheddar
- 6 slices American cheese
Burgers
- 1 1/2 lb ground beef
- Salt and black pepper
- Oil, for the pan
- 4 seeded burger buns
- Thinly sliced red onion, iced in cold water
Steps
- Heat the oven to 375°F. Toss carrots, celery, and red onions with oil and salt; roast until deeply caramelized. Pulse or chop finely, then mix with pickles, pickle juice, and ketchup.
- For the cheese sauce, simmer cream with Dijon, soy sauce, hot sauce, and garlic. Melt in the cheddar and American cheese until smooth; keep warm.
- Divide the beef into 12 loose balls. Heat a lightly oiled skillet or griddle until very hot. Smash into thin patties, season with salt and pepper, and cook until browned with crisp edges. Flip briefly to finish.
- Build each burger with three patties on a seeded bun, spreading vegetable mix and cheese sauce between layers. Top with iced red onion and serve immediately.
