Steak and Potatoes with Chimichurri
Seared steak with crisp potatoes, broccolini, and chunky chimichurri.
Steak
- 10.5 oz sirloin steak
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- Oil, for searing
- 1 teaspoon butter
Potatoes & Broccolini
- 12 oz baby potatoes
- Oil and salt
- 7 oz broccolini
Chimichurri
- 2 tablespoons chopped parsley
- 2 tablespoons chopped cilantro
- 1 garlic clove, minced
- 1/2 small onion, finely diced
- 1/2 cup diced red bell pepper
- Red pepper flakes
- Smoked paprika
- 1 tablespoon red wine vinegar
- 1 tablespoon lemon juice
- 1 1/2 tablespoons oil
- Salt
- 1/2 teaspoon sugar
Steps
- Roast or air-fry the baby potatoes with oil and salt until crisp and tender.
- Stir together all chimichurri ingredients and set aside so the flavors meld.
- Blanch the broccolini in salted boiling water until bright green and just tender; drain.
- Season the steak with salt, pepper, and smoked paprika. Sear in hot oil, finishing with butter, until done to your liking. Rest, then slice.
- Plate steak with potatoes and broccolini. Spoon chimichurri over the top.
