Sea Salt Sweet Potato Steak Fries

Sea Salt Sweet Potato Steak Fries

Yield: 2 servings From Episode 26

Thick-cut skin-on sweet potato steak fries baked until crisp with olive oil, sea salt, and pepper—a lighter take on a favorite side.

Ingredients

  • 1 large sweet potato or 2 medium, scrubbed
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon freshly ground pepper
  • 1 teaspoon coarse sea salt crystals (optional)

Steps

  1. Preheat oven to 425°F. Spray a large baking sheet with nonstick spray.
  2. Scrub the sweet potato(s) well. Cut in half, then into quarters, and into large steak-fry wedges.
  3. Place the sweet potato on the prepared baking sheet. Pour oil evenly over the wedges. Sprinkle with sea salt and pepper and mix with your hands.
  4. Arrange the potato steaks in a single layer without overcrowding. Use two baking sheets if needed.
  5. Bake for 15 minutes on the middle rack. Turn them and bake for 10 to 12 more minutes or until edges start to brown.
  6. Sprinkle with coarse sea salt crystals if using. Serve hot.
