Savory Filet Mignon with Blue Cheese

Restaurant-quality filet mignon seared in a cast-iron skillet and finished in the oven, topped with melting blue cheese butter.

  1. Preheat your oven to 450°F.
  2. Season the steaks generously on all sides with kosher salt and freshly cracked black pepper.
  3. Place a cast iron skillet over medium-high heat. Add 2 tablespoons butter. Once the butter begins to brown and smoke slightly, quickly place the steaks into the skillet.
  4. Sear the steaks for about 2 minutes on each side until deeply golden brown. If needed, add the remaining tablespoon of butter. Once both sides are seared, turn off the heat.
  5. Transfer the skillet with the steaks into the preheated oven. Cook for about 3 to 5 minutes for medium doneness (125°F for medium-rare; adjust to preference).
  6. Remove the skillet from the oven and let the steaks rest for 5 to 10 minutes. Top each steak with a scoop of blue cheese butter about 2 minutes before serving to allow it to melt slightly.
