Juicy chicken breasts stuffed with sweet roasted red peppers, fresh spinach, and melted mozzarella—an elegant dinner that looks restaurant-worthy but comes together on a weeknight.

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • 1 cup fresh spinach, chopped
  • ½ cup roasted red peppers, chopped
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon Italian seasoning

Steps

  1. Preheat oven to 375°F (190°C). Cut a pocket lengthwise into each chicken breast without slicing all the way through.
  2. In a small bowl, combine spinach, roasted red peppers, mozzarella, and Italian seasoning.
  3. Divide filling evenly among chicken breasts, tucking into the pockets. Secure with toothpicks if needed.
  4. Rub each breast with olive oil. Sprinkle with salt, pepper, garlic powder, and paprika.
  5. Heat a large oven-safe skillet over medium-high heat and sear chicken 2 to 3 minutes per side until golden brown.
  6. Transfer skillet to the oven and bake 18 to 20 minutes, or until chicken reaches 165°F (74°C) internally.
  7. Rest 5 minutes before slicing. Remove toothpicks and serve warm.
