Refrigerator Garlic Dill Pickles

Fast fridge dill pickles packed with garlic and mustard seeds—crunchy, simple, and ready in 24 to 48 hours with no canning required.

Ingredients

  • 3 (4 to 4.5 inch) cucumbers
  • 2 to 3 sprigs fresh dill or 1/4 teaspoon dried dill weed
  • 1/2 cup white vinegar
  • 1/2 cup water
  • 2 cloves garlic, cut in half
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon sugar
  • 1/2 teaspoon yellow whole mustard seeds
  • 1/4 teaspoon black peppercorns

Steps

  1. Rinse the cucumbers and slice into rounds or spears. Pack them into a pint jar, leaving space for brine. If using fresh dill, nestle it in the center with cucumbers around it.
  2. In a medium saucepan, bring the vinegar, water, garlic, salt, mustard seeds, sugar, and peppercorns to a boil. Stir until the sugar and salt melt. Take off the heat.
  3. Allow the brine to cool to room temperature.
  4. Add 2 garlic halves and a few peppercorns to the jar. Pour the brine over the cucumbers. Top off with water if needed to fill the jar.
  5. Chill 24 to 48 hours before eating. Stores 4 to 6 weeks in the refrigerator.
