Outrageous Garlic Bread

Yield: 6 servings From Episode 32

Ina Garten’s outrageous garlic bread with slow-cooked garlic butter, Parmesan, parsley, and lemon zest baked on a scored French baguette until bubbly and golden.

Ingredients

  • 12 tablespoons (1½ sticks) unsalted butter
  • 1 head garlic, cloves separated and peeled
  • 1 cup freshly grated Italian Parmesan cheese
  • 2 tablespoons minced fresh parsley
  • 2 teaspoons grated lemon zest
  • ¼ teaspoon crushed red pepper flakes
  • Kosher salt and freshly ground black pepper
  • 1 (20 to 24-inch-long) crusty French baguette
  • Fleur de sel or sea salt

Steps

  1. Preheat oven to 450°F.
  2. Melt butter over low heat, add garlic, cover, and cook 20 minutes until very tender. Cool slightly.
  3. Mash garlic into butter and stir in Parmesan, parsley, lemon zest, red pepper flakes, salt, and pepper.
  4. Slice baguette in half lengthwise and score each half diagonally without cutting through.
  5. Spread garlic mixture generously on cut sides, cut each half crosswise into 2 pieces, and place on a parchment-lined baking sheet.
  6. Bake 5–7 minutes until bubbly and starting to brown. Cut along scores, sprinkle with fleur de sel, and serve warm.
