Nectarine Tomato Burrata Salad with Hot Honey Dressing

Arugula layered with heirloom and cherry tomatoes, ripe nectarines, torn burrata, and pistachios, finished with a sweet-spicy hot honey vinaigrette.

Hot Honey Dressing

  • 1/3 cup olive oil
  • 2 tablespoons honey
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon red pepper flakes
  • 1 tablespoon fresh basil, chopped
  • 1 teaspoon fresh thyme leaves, chopped
  • Salt and pepper, to taste

Salad

  • 4 cups arugula
  • 2 large heirloom tomatoes
  • 2 firm-ripe nectarines
  • 1 cup cherry tomatoes, halved
  • 8 oz burrata, drained
  • 1/4 cup pistachios, shelled and roughly chopped
  • Basil and thyme, for garnish

Steps

  1. Whisk the olive oil, honey, apple cider vinegar, Dijon, and red pepper flakes. Stir in the chopped basil and thyme; season with salt and pepper.
  2. Arrange the arugula on a large platter. Scatter sliced heirloom tomatoes and nectarine slices; top with halved cherry tomatoes.
  3. Tear the burrata over the salad and sprinkle with pistachios.
  4. Drizzle the hot honey dressing generously over the top. Garnish with fresh basil and thyme. Dress just before serving.
