Nectarine Tomato Burrata Salad with Hot Honey Dressing
Arugula layered with heirloom and cherry tomatoes, ripe nectarines, torn burrata, and pistachios, finished with a sweet-spicy hot honey vinaigrette.
Hot Honey Dressing
- 1/3 cup olive oil
- 2 tablespoons honey
- 2 tablespoons apple cider vinegar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon red pepper flakes
- 1 tablespoon fresh basil, chopped
- 1 teaspoon fresh thyme leaves, chopped
- Salt and pepper, to taste
Salad
- 4 cups arugula
- 2 large heirloom tomatoes
- 2 firm-ripe nectarines
- 1 cup cherry tomatoes, halved
- 8 oz burrata, drained
- 1/4 cup pistachios, shelled and roughly chopped
- Basil and thyme, for garnish
Steps
- Whisk the olive oil, honey, apple cider vinegar, Dijon, and red pepper flakes. Stir in the chopped basil and thyme; season with salt and pepper.
- Arrange the arugula on a large platter. Scatter sliced heirloom tomatoes and nectarine slices; top with halved cherry tomatoes.
- Tear the burrata over the salad and sprinkle with pistachios.
- Drizzle the hot honey dressing generously over the top. Garnish with fresh basil and thyme. Dress just before serving.
