Green Bean Salad
A fresh summer side of blanched green beans, sweet grape tomatoes, and creamy feta in a simple olive oil and apple cider vinegar dressing.
Ingredients
- 1 pound fresh green beans, stems trimmed
- ½ cup olive oil
- ¼ cup apple cider vinegar
- ½ teaspoon salt
- ½ teaspoon ground black pepper
- 10 oz grape or cherry tomatoes, halved
- 2 tablespoons freshly minced parsley
- 8 ounces feta cheese, crumbled
Steps
- Bring 6 cups of water to a boil. Add green beans and boil 3 minutes.
- Prepare a large bowl of ice water. Strain beans and immediately transfer to ice water to stop cooking.
- Drain beans and place in a large bowl with tomatoes and parsley; toss to combine.
- Add oil, vinegar, salt, and pepper to a jar. Seal and shake vigorously to combine.
- Pour dressing over the salad and toss. Gently fold in feta until just combined.
- Serve immediately, garnished with extra feta if desired.
