Classic Mint Mojito
A bright summer mojito built on simple syrup, muddled mint and lime, white rum, and sparkling water.
Ingredients
- 2 tablespoons sugar
- 2 tablespoons water
- 20 sprigs fresh mint
- 1 lime, cut into small wedges
- 2 oz white rum
- Ice
- 2 oz sparkling water
- Extra mint sprigs, for garnish
Steps
- Add sugar and water to a small saucepan; bring to a simmer and cook until the sugar dissolves, 1 to 2 minutes. Remove from heat and cool.
- Add mint and lime to a small pitcher or large glass. Muddle about a minute until the lime juice is extracted and the mint oils release (do not over-muddle).
- Add the cooled simple syrup and rum to the mint and lime.
- Fill each glass with ice. Pour half the mojito mixture into each glass and top with sparkling water.
- Garnish with mint sprigs and serve.
