Baked Boneless Buffalo Bites
Oven-crisped chicken chunks tossed in buttery buffalo sauce—lighter than fryer wings, with the same kick.
Ingredients
- 1 cup all-purpose flour
- 2/3 cup panko breadcrumbs
- 1 teaspoon kosher salt
- 1/2 teaspoon paprika
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1 egg
- 1/4 cup milk
- 2 boneless chicken breasts, cut into cubes
- 1/4 cup buffalo sauce
- 1–2 tablespoons butter
- 2 tablespoons water
- Cooking spray
Steps
- Heat the oven to 475°F. Stir together the flour, panko, salt, paprika, pepper, and cayenne.
- Whisk the egg with the milk. Dip chicken cubes in the egg wash, then coat in the breading. Arrange on a greased baking sheet and mist with cooking spray.
- Bake 8–10 minutes, then broil 1–2 minutes until crisp and cooked through.
- Warm the buffalo sauce with butter and water; toss with the hot chicken and serve.
